Lately, I've been fantasizing about having a little restaurant where I'd cook healthier versions of all the yummy, southern fare I grew up eating in my grandma's kitchen. The restaurant would be called Delphia's Kitchen, I decided. And then, today, it occurred to me to start a little recipe log right here and now for my future restaurant. And then I got really honest with myself and admitted I have zero desire to run a restaurant and this may be as big as this little kitchen gets...which turns out, is quite the appropriate metaphor for my grandma's kitchen, anyway. Always too small, and really only enough room for her in there, but occasionally she'd tolerate little feet being under hers. With total understanding, I now do most of my cooking during my Toddlers' naptimes and, really only enjoy my first real meal of the day at that time. I'll let you know what I make here.
